Easter Egg Salad Sandwich

I finally finished using all of my naturally dyed Easter eggs from last week’s Girls Night.  I made 2 batches of egg salad.  One last weekend and another tonight.  I don’t know why, but I love egg salad.  I keep mine pretty simple: 6 hard-boiled eggs, 1 scallion, 2 radishes, and 2 stalks of celery.  Chop everything up into small pieces and throw in a bowl.  Add some mayonnaise, Dijon mustard, salt, and pepper and you have yourself a fine specimen of egg salad.  I like to jazz mine up a little bit with a splash of balsamic vinegar, some garlic powder, and a little bit of smoked paprika.  That’s it.  Throw it between 2 slices of bread, add some sprouts, and it’s a meal.  Tonight, because I had some fresh veggies in the fridge, I threw on a few cucumber slices and some red bell pepper.  A light and simple dinner. Just what I wanted after my run tonight with Hubby and The Stinker.  And I have leftovers for lunch tomorrow.  Perfect.
