Cranberry Orange Bread


‘Tis the season for cranberries and this bread is perhaps my all-time favorite holiday season bread.  It is easy to make (the biggest is pain is zesting the orange) and it is worth waiting an hour for it to cook.  Trust me.  I used to give this as holiday gifts and people always requested it the next year.  It’s that good.

Cranberry Orange Bread

2 cups flour

1 1/2 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup sugar

1 egg, beaten

1/2 cup orange juice

zest of 1 orange

2 tablespoons melted butter

2 tablespoons hot water

1 cup raw whole cranberries (can be fresh or frozen)

1 cup coarsely chopped walnuts or pecans

Sprinkle 1 tablespoon flour over cranberries and walnuts.  Set aside.  Mix the first 5 ingredients (through sugar) in a large bowl.  In a second bowl mix the egg, orange juice, orange zest, butter, and water.  Add wet ingredients to dry ingredients and mix until dry ingredients just moistened.  Fold in cranberries and walnuts.

Spoon into a greased 4″x8″ bread pan.  Bake at 325 degrees F for 1 hour.
